- ½ cup uncooked quinoa about 1-1½ cups cooked
- 1 cup broth or water
- 1 can chickpeas drained and rinsed
- 1 cup matchstick carrots or shredded
- ½ cup almonds chopped or slivered
- ½ cup raisins no sugar added
- ½ cup chopped parsley
- 1 lb cooked chicken breast optional
Honey Lemon Dressing
- ⅓ cup olive oil
- 3 tbsp lemon juice
- 2 tbsp honey
- ½ tsp cumin
- ¼ tsp cinnamon
- pinch salt
Prepare quinoa according to package instructions.
In a large mixing bowl, combine rinsed chickpeas, carrots, almonds, raisins, and parsley.
Make the Honey Lemon Dressing by adding the ingredients to a small bowl and stirring together.
Once quinoa is cooked and cooled, add to the mixing bowl followed by the prepared dressing. Gently stir everything together.
Serve as a side dish or add cooked chicken and enjoy as a meal!
