Healthy Turkey Lettuce Wraps

These Healthy Turkey Lettuce Wraps are so easy to make and loaded with extra veggies! Don’t forget the Asian-style peanut sauce to add on top.

Ingredients
  

  • 2 tbsp avocado oil separated
  • 1 clove garlic minced
  • 2 tsp ginger grated
  • 1 lb ground turkey or pork or chicken
  • 1 bell pepper diced
  • 1 cup shredded carrots
  • 1 cup cauliflower rice
  • ¼ cup coconut aminos or soy sauce
  • 1 tbls sesame oil
  • salt to taste
  • 8 leaves romaine lettuce or iceberg or bib

Peanut Sauce

  • ¼ cup coconut aminos
  • ¼ cup peanut butter
  • 2 tbsp maple syrup
  • 2 tbsp balsamic vinegar

Optional Toppings

  • cilantro
  • green onion
  • peanuts

Instructions
 

  • In a large pan, heat 1 tbsp of avocado oil over medium heat. Add the garlic and ginger and cook until fragrant, about two minutes. Then, add the ground turkey and break up as it begins to brown. Once fully cooked, move the turkey to a plate, drain any grease, and return the pan to the stove.
  • Heat another tbsp of avocado oil and sauté bell pepper, carrots, and cauliflower. Cook vegetables until moderately soft. Add turkey to back to the pan and combine. Reduce heat to low.
  • Season with salt and stir in the coconut aminos and sesame oil. Turn off heat.
  • In a bowl, add all the sauce ingredients and stir to combine.
  • Assemble the wraps by adding the turkey, sauce, and optional toppings. Enjoy!
