Healthy Sloppy Joes (paleo, whole 30)

Shake up your typical burger night with these Healthy Sloppy Joes! They take 15 minutes to whip up and are paleo + Whole 30 compliant.

- 1 tbsp avocado oil
- 1 small onion
- 1 lb ground beef
Sloppy Sauce
- 6 oz tomato paste
- 3 tbsp apple cider vinegar
- 2 tbsp coconut sugar or sweeter of choice
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 cup water (approx)
In a small saucepan, combine the sauce ingredients - leaving out the water. Simmer over low heat for about 5 minutes.
Slowly add in the water while simmering, until desired thickness.
Meanwhile, in a pan over medium heat, sauté the onion in oil until translucent (about 3 minutes). Then add the ground beef and cook until browned, breaking apart into small chunks.
Once the meat is browned, scoop out the grease from the pan. Turn down the heat to low and stir in the sauce. Heat together for a few minutes.
Serve on your favorite buns or in a baked sweet potato and enjoy!
