Egg Roll in a Bowl with Coleslaw Mix

This one-pan Egg Roll in a Bowl is so easy to make with the help of a bag of coleslaw mix. The ingredients are healthy and simple but packed with flavor!

- 1 tbsp coconut oil
- 3 cloves garlic minced
- 1 tsp ginger grated
- 1 lb ground turkey or pork
- 12 oz bag coleslaw mix or shredded cabbage
- 5 green onions
- 3 tbsp coconut aminos or soy sauce
- 1 tbsp sesame oil
Spicy Mayo
- 3 tbsp mayo
- 2 tsp hot sauce
- 2 tsp lime juice
- pinch salt
In a large pan, melt the coconut oil on medium heat. Sauté the garlic and ginger for 2-3 minutes. Add the ground turkey or pork and break it apart as it cooks. Cook until browned.
Add the coleslaw mix and green onions over of the cooked meat. Mix together. The greens with reduce in size as they soften.
After about 7 minutes, when softened, stir in the coconut aminos and sesame oil. Continue to heat for a few minutes then turn off stovetop.
For the Spicy Mayo, combine the ingredients in a small bowl. Taste and adjust ingredients to your liking.
Serve the egg roll mixture over rice or cauliflower rice and top with the Spicy Mayo sauce. Enjoy!
