Simple Bean Salad

As I’ve developed a routine for my new (personal training) job, I have been proactive in making healthy options to have ready for on-the-go snacks. Usually, I opt for my PB Coconut Balls or a quinoa salad – shoutout to this Thai Peanut Quinoa Salad.

At a backyard bbq hosted by my aunt, this yummy bean salad was a side dish…apparently from Costco. I wasn’t able to find it, so of course I set out to make something similar. And here you go!

This Simple Bean Salad was so easy to make. The only real effort is blanching the fresh green beans, it does really help with the texture but I’m sure you could skip that part for a slightly crunchier bean.

Ingredients
  

  • 1 ½ cups fresh green beans 1-2 inch pieces
  • 15 oz can of kidney beans drained and rinsed
  • 15 oz can of garbanzo beans drained and rinsed
  • ½ small red onion finely diced
  • cup olive oil
  • cup apple cider vinegar
  • 2 tbsp honey
  • ½ tsp dried Italian herb blend
  • salt and pepper to taste

Instructions
 

  • Bring a pot of water to a boil. Add the cut green beans and boil for about 3 minutes, until the beans show the first sign of softening.
  • Drain the green beans then add to a bowl of cold water with ice to stop the cooking. Once fully cool, drain again, dry, and add to a large mixing bowl.
  • To the bowl, add the drained kidney and garbanzo beans and the diced red onion.
  • In a small bowl or glass measuring cup, add the oil, vinegar, honey, herbs, and salt + pepper. Stir well to incorporate the honey. Then, pour over the bean mixture and combine everything thoroughly.
  • Ideally, wait a few hours before enjoying to let the flavors mix together. Store in an airtight container in the fridge. Enjoy!
