Ingredient Swap Options

  • Garlic + Ginger: these are great flavor-enhancers but can be omitted for convenience and simplicity
  • Turkey: easily substitute ground chicken or pork
  • Cauliflower, Carrots, Pepper: while these are my go-tos for this recipe, snow peas, broccoli, zucchini, and mushrooms are all options as well
  • Lettuce: opt for romaine, bib, or iceberg – chopped lettuce could also work for more of a salad situation
  • Asian-style Peanut Sauce: arguably the best part of the meal, adjust the ingredients to your liking (more or less sweet, salty, peanut-y)
  • Toppings: cilantro and/or green onions can be added as a topping for a little extra flavor and possibly a few roughly chopped peanuts or cashews for some additional crunch
  • Rice: a great option to add to the wraps to stretch the meal to feed more people or create more leftovers

Tips for Making Healthy Turkey Lettuce Wraps

This is a one pan meal with lots of ingredients, so make sure your pan is big enough to fit and cook everything.

Use prepared veggies! Bagged cauliflower rice and shredded carrots are the perfect way to save time and eliminate chopping. Bonus: they will also cook faster!

Make it your own – with so many options for swaps and adjustments, you can tailor this recipe to fit your taste. Anyway you make it, it’s going to be delicious!

Ingredients
  

  • 2 tbsp avocado oil separated
  • 1 clove garlic minced
  • 2 tsp ginger grated
  • 1 lb ground turkey or pork or chicken
  • 1 bell pepper diced
  • 1 cup shredded carrots
  • 1 cup cauliflower rice
  • ¼ cup coconut aminos or soy sauce
  • 1 tbls sesame oil
  • salt to taste
  • 8 leaves romaine lettuce or iceberg or bib

Peanut Sauce

  • ¼ cup coconut aminos
  • ¼ cup peanut butter
  • 2 tbsp maple syrup
  • 2 tbsp balsamic vinegar

Optional Toppings

  • cilantro
  • green onion
  • peanuts

Instructions
 

  • In a large pan, heat 1 tbsp of avocado oil over medium heat. Add the garlic and ginger and cook until fragrant, about two minutes. Then, add the ground turkey and break up as it begins to brown. Once fully cooked, move the turkey to a plate, drain any grease, and return the pan to the stove.
  • Heat another tbsp of avocado oil and sauté bell pepper, carrots, and cauliflower. Cook vegetables until moderately soft. Add turkey to back to the pan and combine. Reduce heat to low.
  • Season with salt and stir in the coconut aminos and sesame oil. Turn off heat.
  • In a bowl, add all the sauce ingredients and stir to combine.
  • Assemble the wraps by adding the turkey, sauce, and optional toppings. Enjoy!
