A good amount of my recipes are a result of an impulse buy at the grocery store. This Gluten Free Shrimp Scampi is no exception.

I had always wanted to try Taste Republic’s Gluten Free Fettuccine and when I saw it was on sale at Whole Foods I snagged a package. And then the idea for this meal came to mind.

The ingredients are simple and the dish was so easy to make. I loved how many flavors were packed into such a simple dish.

Plus, the leftovers are great! Store them in the fridge up to 4 days.

Ingredients

  • Fettuccine Noodles – I prefer the refrigerated version of linguini or fettuccine (Trader Joe’s has one too), but any gluten free noodle could work.
  • Chicken Broth – Typical shrimp scampi calls for white wine, but that’s not something we usually have in the apartment. So, I use chicken (or vegetable) broth to add nutrients and create a more mild taste but still lots of flavor!
  • Shrimp – I prefer the Wild Raw Argentinian Red Shrimp from Trader Joe’s because it’s a great deal and it comes frozen so I can stock up my freezer. If I’m thinking ahead, I’ll let it thaw in the refrigerator overnight.
  • Zucchini – This is just a colorful addition to the dish, a little hidden veggie. Feel free to omit.

Gluten Free Shrimp Scampi – Make It Your Own!

There are really simple ingredients to this pasta dish but all are important since each is packed with complimenting flavor. However, the flavors are adjustable. If you prefer lemony flavors, you can squeeze in extra lemon juice. If you like lots of butter, you can replace the olive oil for extra butter. And so on. Make it your own! This recipe is really just a guideline.

Gluten Free Shrimp Scampi

Ingredients
  

  • 1 package fettuccini noodles gluten free
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • ½ shallot diced
  • ½ cup chicken broth
  • ½ tsp salt
  • ½ tsp pepper
  • 1 lb shrimp raw, peeled, deveined
  • 1 medium zucchini chopped
  • ½ lemon juice
  • cup fresh parsley leaves finely chopped

Instructions
 

  • Prepare the noodles according to the instructions on the package.
  • Heat butter and olive oil in a large, deep pan over medium heat. Add garlic and shallot and sauté for about 3 minutes.
  • Add shrimp and zucchini to the pan and sauté until thoroughly cooked for about 5 minutes. Flipping halfway through.
  • Pour broth into the pan, sprinkle in salt and pepper. Simmer for another 3 minutes.
  • Turn off the heat and juice half a lemon into the pan. Stir in the parsley.
  • Combine the prepared noodles and shrimp with sauce. Stir together. Serve and enjoy!
