I consistently go back to this meal when I’m looking for something quick and nutritious. The ingredients are so simple and I usually have them on hand.

I’ve gotten into the habit of always picking up a bag of coleslaw mix from the grocery store. These bags also come in handy for topping these delicious Instant Pot Buffalo Chicken Tacos or saving time when making Thai Peanut Quinoa Salad.

My favorite coleslaw mix is a bag of organic shredded cabbage from Trader Joe’s. This bag is only 9oz, so I sometimes supplement with a handful or two of spinach.

Paleo and Whole 30 Compliant Ingredients

Another reason why this meal is so great, it meets the criteria of lots of different diets: Paleo, Whole 30, gluten free, keto, and more! If you’re not trying out any of these diets, Egg Roll in a Bowl is still for you for many reasons. It is easy to make, full of flavor, has simple ingredients, and makes for yummy leftovers.

  • Garlic + Ginger – highly recommend using fresh garlic and ginger for flavor and health benefits
  • Ground Turkey – easily substitute ground pork
  • Coleslaw Mix – if the bag is less than 12 oz, feel free to supplement with spinach
  • Green Onions – fun additional flavor to the dish
  • Coconut Aminos – a great substitution for soy sauce, which can also be used
  • Sesame Oil – a recent addition to my pantry that has added so much flavor to my asian-inspired dishes

Spicy Mayo

While the dish is great on it’s own, this spicy mayo is the perfect addition. I don’t have a lot of tolerance for spice, but have no problem with this combo of ingredients.

  • Mayo – opt for avocado oil mayo (shoutout to Primal Kitchen)
  • Hot Sauce – ideally sriracha, however I’ve used chilula to the same effect
  • Lime – feel free to adjust to your liking

Quickly Whip Up this Egg Roll in a Bowl (thanks to Coleslaw Mix)

This nutrient dense takes 20 minutes max to make. And you just need one pan…but make it a big one!

First thing, you want to briefly sauté the garlic and ginger for 2-3 minutes, until fragrant. Then, add the ground turkey and break it into clumps as it cooks.

After the meat is browned, add the coleslaw mix and green onions. Don’t worry if it appears like a lot of food, the cabbage will reduce in size as it softens. 

When softened, stir in the coconut aminos and sesame oil. Continue to heat for a few minutes then turn off stovetop. 

For the Spicy Mayo, simply combine the ingredients in a small bowl. Feel free to adjust ingredients to your liking. 

I’m a big fan of using cauliflower rice as a base to this dish. It adds substance as well as extra nutrients. Cauliflower rice is super easy to prepare, I usually just empty a bag of frozen rice on a skillet with a little oil and heat for about 7 minutes, until softened. You can also prepare it in the microwave (a luxury that I do not have in my apartment).

Ingredients
  

  • 1 tbsp coconut oil
  • 3 cloves garlic minced
  • 1 tsp ginger grated
  • 1 lb ground turkey or pork
  • 12 oz bag coleslaw mix or shredded cabbage
  • 5 green onions
  • 3 tbsp coconut aminos or soy sauce
  • 1 tbsp sesame oil

Spicy Mayo

  • 3 tbsp mayo
  • 2 tsp hot sauce
  • 2 tsp lime juice
  • pinch salt

Instructions
 

  • In a large pan, melt the coconut oil on medium heat. Sauté the garlic and ginger for 2-3 minutes. Add the ground turkey or pork and break it apart as it cooks. Cook until browned.
  • Add the coleslaw mix and green onions over of the cooked meat. Mix together. The greens with reduce in size as they soften.
  • After about 7 minutes, when softened, stir in the coconut aminos and sesame oil. Continue to heat for a few minutes then turn off stovetop.
  • For the Spicy Mayo, combine the ingredients in a small bowl. Taste and adjust ingredients to your liking.
  • Serve the egg roll mixture over rice or cauliflower rice and top with the Spicy Mayo sauce. Enjoy!
