Sunday morning waffles have become a staple in our routine. After enjoying morning coffee + chia pudding, we’ll go to the gym and come home to make a large stack of waffles, usually accompanied with some eggs and bacon. Possibly some more coffee.

I started out by making Birch Bender paleo pancakes, which was super easy since you just add water. But, that would require a trip to the grocery store and was more expensive than we liked. While I love pancakes, there is a special place in my heart of waffles. So, our Sunday brunch pivoted to include these homemade Almond Flour Waffles.

Simple Ingredients

Almond Flour – my go-to nutrient-dense option, the bag from Costco is by far the best deal I’ve seen

Arrowroot Flour – while listed as optional, this flour will help bind the ingredients and create a fluffier waffle

Almond Milk – any milk will work here, you can even use water if you’re in a pinch

Eggs – not only a binder, a great source of protein

Coconut oil – any oil will work as a replacement, try avocado oil for a mild flavor

Maple Syrup – substitute honey if desired, you can omit or add more depending on your desired sweetness level

Almond Flour Waffle Toppings

Make these waffles interesting by trying different topping combinations:

  • Raspberry Sauce – this is my personal favorite, melt frozen raspberries on the stove with a little bit of maple syrup and drizzle on top
  • Banana Nut – slice up a banana and place on top, then sprinkle on some finely chopped walnuts or pecans and finished with a honey drizzle
  • Chocolate Peanut Butter – spread peanut butter on the waffle and then either add a few chocolate chips for a little crunch or melt the chocolate to drizzle on top
  • Savory – a different concept but you can top the waffle with fried or poached eggs, some sautéed vegetables, and bacon or sausage

Easy Almond Flour Waffles

These Almond Flour Waffles are the perfect addition to your weekend brunch! The batter is made with simple, nutritious ingredients and is very versatile.

Ingredients
  

  • 2 cups almond flour
  • 2 tbls arrowroot flour optional
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup almond milk or other milk of choice
  • 2 eggs
  • 2 tbsp coconut oil melted, cooled
  • 2 tbsp maple syrup optional
  • 1 tsp vanilla extract

Instructions
 

  • Plug in waffle iron to start heating.
  • In a large mixing bowl, combine almond flour, arrowroot powder, baking powder, and salt.
  • Then add in the milk, eggs, oil, syrup, and vanilla. Stir to combine into a thick batter.
  • After the waffle iron is heated, coat with oil or butter and add ½-1 cup scoop of waffle batter to the iron and close.
  • Once the waffle is beginning to turn golden, about 4 minutes but time can vary, remove from the iron with a fork. Set on a plate and repeat the process until the batter is gone.
  • Enjoy with desired toppings!
