Simple baking recipes are my favorite. I don’t adhere to the belief that baking is a science requiring all ingredients to be precisely measured. Instead, I like to create recipes that you can fumble through and still get a successful result. While the results might not always look bakery-ready, they will always taste good!

This Almond Flour Chocolate Chip Muffin recipe is my attempt to strip down healthy, paleo muffins to the bare minimum. Creating the easiest recipe possible was my goal and I believe I succeeded.

These muffins are made with simple ingredients that I usually have on hand and mixed together in one bowl. Really, it shouldn’t take you more than 5 minutes from the time you get out your mixing bowl to the time your muffin tin is in the oven. Meaning, you can enjoy these muffins less than half an hour after you decide to make them!

Paleo Ingredients

Not only are these muffins gluten free, they are also paleo compliant. The ingredients are simple and come from whole foods.

  • Almond Flour – I prefer to use almond flour for my gluten free baking because it is more nutrient-dense and blood sugar friendly than classic gf mixes, usually made with rice flour
  • Coconut Oil – I buy the huge tub of this from Costco and use it in most of my baked goods, if you don’t want a hint of coconut to come through your muffins, opt for refined coconut oil that had less flavor
  • Maple Syrup – another Costco purchase for me, you can also substitute honey 1:1
  • Eggs – I use large, pasture raised eggs. Ideally, they’d be at room temperature so they don’t solidify the coconut oil…but I usually don’t think far enough in advance to take them out of the fridge
  • Vanilla Extract – this is a debatable paleo ingredient, as it contains a small amount of alcohol, if you’re choosing to add it, opt for a high quality bottle with no added sugar or flavoring
  • Chocolate Chips – paleo chocolate chips are hard to find, I love these from Thrive Market.

Not Just Almond Flour Chocolate Chip Muffins

The great thing about this recipe is that it can easily be changed into your favorite muffin flavor. Make some simple swaps to create blueberry or banana walnut muffins.

Blueberry Muffins

Replace chocolate chips with blueberries and add in two tablespoons for fresh lemon juice with the wet ingredients. Tip: don’t add the blueberries until you’ve divided the batter into the muffin tin, then add a few berries to each muffin and swirl them in. This will prevent the color from bleeding into the batter and creating blue/purple muffins.

Banana Walnut Muffins

Replace maple syrup with mashed, ripe banana. Either replace or split walnuts with chocolate chips. In other words, use 1/2 cup of walnuts or 1/4 cup of walnuts + 1/4 cup chocolate chips. Also, an option to add 1 tsp of cinnamon.

Ingredients
  

  • 2 cups almond flour
  • ½ tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • ¼ cup coconut oil melted
  • ¼ cup maple syrup or honey
  • 3 eggs
  • 1 tsp vanilla
  • ½ cup chocolate chips

Instructions
 

  • Preheat the oven to 350° and prepare your muffin tin with oil or paper cups.
  • Combine the dry ingredients together in a mixing bowl.
  • Add the wet ingredients and mix well. Stir in chocolate chips
  • Pour batter into muffin tin and bake for about 15 minutes. Let them cool for a few minutes and enjoy!
