I have been making these peanut butter coconut balls for years! And I think I’ve perfected the recipe. Meaning, the perfect ratio of sweet and salty, sticky and crunchy.

Energy balls are incredibly versatile. You can enjoy them with breakfast, as a snack, or for a little something sweet after a meal…like these Healthy Turkey Lettuce Wraps.

Every time I come home from being on the road, I make a batch these. It’s automatic at this point. I get out the peanut butter, coconut, oats, flax seeds, honey, and whatever else I want to throw in them. In about 15 minutes, they’re ready to go.

I end up making these about every 10 days because they disappear so quickly!

These Peanut Butter Coconut Balls are so easy to make. I love that they are a sweet, no bake treat. Especially in the summer when I’m not as motivated to turn on the oven.

However if you are in the mood to turn on the oven, I recommend making some Almond Flour Chocolate Chip Muffins that have the same easy, versatile, customizable characteristics.

The Non-Negotiable Ingredients

Oats: Rolled oats are the best choice here, adding complex carbohydrates that give this snack the commonly used ”energy ball” title.

Quick oats could work too, probably created a more dough-y texture.

Ground Flax Seeds: Plenty of fiber in the flax to aid in balancing blood sugar while enjoying this sweet treat. Also, a great source of omega-3 fatty acids.

Peanut Butter: The OG ingredient that keeps everything together. Not to mention, healthy fat and protein that make these bites satiating.

You could substitute almond butter…which would alter the flavor a good bit.

Shredded Coconut: A must – add coconut shreds or flakes for healthy fat and additional flavor.

Honey: Holds the ingredients together, adds sweetness, and packed with antioxidants!

Maples syrup also works – although I find that they tend to come out a little bit dry.

Optional Add Ins

  • Hemp Seeds
  • Chocolate Chips
  • Raisins
  • Chopped Nuts
  • Cinnamon

Tips to Assemble Peanut Butter Coconut Balls

  1. Add the dry ingredients to the bowl first, including your add ins. Stir together before adding the peanut butter and honey. This will prevent oats, flax seeds, coconut, etc from sticking to the measuring cups.
  2. Spray or oil the 1/3 cup before adding the honey. This will allow the honey to come out easier, without having to use a spatula.
  3. Briefly chill the mixture in the fridge or freezer before rolling into balls to help them stick together.

Ingredients
  

  • 1 cup rolled oats
  • ½ cup ground flax seed
  • cup shredded coconut
  • ½ cup natural peanut butter
  • cup honey

Optional Add Ins

  • ¼ cup chocolate chips or raisins
  • ¼ cup hemp seeds or chopped nuts
  • 1 tbls cinnamon

Instructions
 

  • In a large mixing bowl, stir oats, flax seed, and coconut. Add peanut butter and honey. Mix together well.
  • Add any optional add ins and fold in.
  • Once thoroughly combined, form mixture into bite-sized balls (about 1-2 tbls each).
  • Store in the fridge and enjoy!
